But I have heard people turn their noses up to the word "eggplant" before even giving it a chance. Everyone has their way of making and eating eggplant parm. When I worked at a vegetarian restaurant I made many entrees of this stuff and everyone raved about it. The simple way I served it is not how I traditionally make it. I am going to give you the super easy one+ serving restaurant entree way and maybe if your interested enough I will share my great grandma Nina's way in another post. &amp;nbsp;&lt;/span&gt;&lt;br /&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;*NOTE: this recipe will include a vegan/gluten-free way of preparing the entree for those of you who intolerant of eating dairy and/or bread crumbs*&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;INGREDIENTS&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;1 &amp;nbsp;eggplant cut into 1-1/2 in. thick slices with or without skin (4-5/srvg)&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;1-2 eggs beaten&amp;nbsp;&lt;/span&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;OR&lt;/span&gt;&lt;/span&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;&amp;nbsp;equivalent&amp;nbsp;egg replacer&amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;1 cup seasoned bread crumbs &lt;/span&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;OR&lt;/span&gt;&lt;/span&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;&amp;nbsp;brown rice flour seasoned w/ s,p,g and dried basil&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;2+ Tbs extra virg olive oil (any cooking oil)&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;s,p,g &amp;nbsp;to taste&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;1/4+ cup pasta sauce per srvg&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;1/4+ cup dairy &lt;/span&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;OR&lt;/span&gt;&lt;/span&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt; vegan mozz shredded per srvg&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;DO WORK!&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;*Pre heat oven to 350*&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;*Pre heat pan and oil on low flame&amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;*Dip each eggplant slice into egg or replacer letting excess drip off *otherwise coating will get clumps&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;*Cover both sides of eggplant w/choice of coating&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;*Increase heat to medium and place eggplant in hot oil (eggplant will suck up oil fairly quick so be sure to add oil as needed to pan &lt;/span&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;NOT&lt;/span&gt;&lt;/span&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;&amp;nbsp;on top of eggplant)&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;*Nows the time to sprinkle eggplant with s,p,g&amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;*Cook each side till golden, crisp and fork tender (eggplant slices are thin enough to cook fast but will also cook in oven)&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: #cc33cc;"&gt;*Place cooked eggplant on pizza/cookie pan, cover with desired amount of sauce and sprinkle with cheese. They are easy to make check out my basic recipe...&lt;/span&gt;&lt;br /&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;1 package Goya Discos (frozen int'l foods)&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;16 oz shredded cheddar cheese or Teese cheddar&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;1/2 cup Frank's Red Hot&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;2 TBLS Goya Recatio (also frozen)&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;3/4 lb no beef crumbles, tofu or TPV&amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;s,p,g, chili powder &amp;amp; cumin to season&amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;1/2-1 cup Canola Oil or your choice oil&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;For crumbled Tofu: Heat skillet and add tofu, cook until dry with a bit of a crusty texture add s,p,g and 2 TBLS Recatio, add Frank's and simmer 3-5 minutes (stir it up)&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;For TPV: Prior to cooking w/above ingredients, Bring 2 cups H2o and 1 1/2 cups TPV to boil w/1/2 cup "no beef" seasoning and continue boiling for 7 minutes until flakes are ground consistency. Drain water from pot, TPV will still be wet so use a strainer with netting and spoon TPV pressing out water with ladle or small bowl until dry. Then follow above instructions for tofu.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;Once your choice is cooked and seasoned you are ready to assemble the Empanadas!&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;It is best to let the discos defrost a bit but not completely as they are easier to fold w/o ripping. Up until now I have never rolled out the Discos but I'm thinking it's a good thing to do. *tested &amp;amp; approved*&amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;*Roll Discos out about 1/2 inch(if you are making bite sized empanadas roll out 1 inch and cut in 4ths).&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;*sprinkle w/ cheese about 1 TBLS&amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;*add protein of choice&amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;*carefully fold disco over filling and press edges together w/ fingers or a fork &amp;nbsp;(I prefer fingers as fork can puncture disco)&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;*once all are assembled Heat 1/2 cup oil in large skillet&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;* add 4 Empanadas to hot oil and fry to golden and flip&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;*remove golden crispy Empanadas and place on paper towel covered plate to drain. Option 2-Oil cookie sheet, Bake at 350 degrees until golden brown, brush with oil if desired.&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;VOILA! Beautiful Crispy Empanadas! These tasty treats will have your friends and family begging you to make them for every occasion and you'll want to b/c they're that good!&amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: 'trebuchet ms';"&gt;The Goya Discos can also be used to make turnovers or be creative! Seitan is also a great meat substitute!
